SOURWOOD (OXYDENDRUM ARBOREUM): ONE OF THE VERY FINE AND MOST HIGHLY TOUTED HONEYS IN NORTH AMERICA IS SOURWOOD. THE TREES ARE COMMON FROM SOUTHERN PENNSYLVANIA TO NORTHERN FLORDIA AND WEST THROUGH TENNESSEE. THOUGH THEY ARE PLANTED AS ORNAMENTALS IN MANY PLACES. MOST OF THE SOURWOOD HONEY IS PRODUCED IN THE ALLEGHNY AND BLUE RIDGE MOUNTAINS. THE TREES FLOWER FROM MID TO LATE JUNE INTO JULY. DURING YEARS WHEN IDEAL CONDITIONS FOR NECTAR SECRETION EXIST ONE MAY SHAKE DROPLETS OF NECTAR FROM THE FLOWERS. SOURWOOD HONEY IS LIGHT COLORED AND ARAMATIC, WITH A DISTINCTIVE FLAVOR IT IS WELL KNOWN IN THE AREAS WHERE IT IS PRODUCED AND IN SUCH DEMAND THAT MOST OF IT IS SOLD LOCALLY!
